A spin on Mom's classic.
Popover Pizza, a la Heidi
Ingredients:
10 oz. Shitake mushrooms
Small Onion
Garlic Clove, crushed
One package vegetarian "meat" crumbles (equal to 1 lb meat)
2 oz. sliced black olives
Seasonings: Trader Joe's 21-seasoning salute, Ono HI seasoning, pepper
25 oz jar artichoke and tomato pasta sauce
16 oz mozzarella cheese
1 cup soy milk
1 cup flour
2 eggs
1/4 cup fresh grated Parmesan cheese
Directions:
Saute mushroom and onion until onion is translucent. Add garlic, meat crumbles, black olives, and seasonings. Mix. Add pasta sauce. Spread veggie-sauce mix in bottom of greased 9x13 pan. Sprinkle mozzarella cheese over veggie mix. Mix soy milk, flour, and eggs and pour over cheese layer. Sprinkle Parmesan on top. Cover with foil and bake at 400 degrees for 20 minutes. Remove foil and bake 15 minutes more, until top is golden brown.
